Ingredients:
1 pound thin spaghetti, broken into 1-inch pieces
1 pint cherry tomatoes, halved
2 medium zucchini, diced
1 large cucumber, diced
1 medium green bell pepper, diced
1 medium red bell pepper, diced
1 large red onion, diced
2 cans ripe olives (2¼ oz each), sliced and drained
For the Dressing:
1 bottle Italian salad dressing (16 oz)
¼ cup grated Parmesan cheese
1 tablespoon sesame seeds
1 teaspoon paprika
½ teaspoon celery seed
¼ teaspoon garlic powder
Instructions:
Cook the Pasta:
Cook the spaghetti according to package directions until al dente. Drain well and rinse with cold water to cool it down completely.
Prepare the Vegetables:
In a large mixing bowl, combine the halved cherry tomatoes, diced zucchini, cucumber, green and red bell peppers, red onion, and sliced olives. Stir to mix.
Make the Dressing:
In a separate bowl, whisk together the Italian salad dressing, grated Parmesan cheese, sesame seeds, paprika, celery seed, and garlic powder.
Combine & Chill:
Pour the dressing over the vegetables and pasta, tossing until everything is well coated. Cover and refrigerate the salad for at least 3 hours, or overnight, to allow the flavors to meld.
