A classic treat with a sweet and crunchy twist, Caramel Corn is perfect for snacking or sharing at parties. With its irresistible caramel coating and optional peanuts, this recipe will delight anyone with a sweet tooth!

Ingredients:

7 quarts plain popped popcorn: Popcorn is the base for this crunchy treat. Ensure it’s freshly popped and free from unpopped kernels.
2 cups dry roasted peanuts (optional): Adds a savory crunch. If you prefer, you can skip these or substitute with other nuts.
2 cups brown sugar: Provides the rich, caramel flavor.
1/2 cup light corn syrup: Helps to make the caramel sauce smooth and prevent crystallization.
1 teaspoon salt: Enhances the overall flavor.
1 cup margarine: Creates a buttery caramel sauce.
1/2 teaspoon baking soda: Helps to lighten the caramel mixture, making it crispier.
1 teaspoon vanilla extract: Adds depth and a pleasant aroma.

Directions:

Prepare the Popcorn: Place the popped popcorn into two shallow greased baking pans, such as roasting pans, jelly roll pans, or disposable roasting pans. If using, add the dry roasted peanuts to the popcorn. Set aside.

Preheat Oven: Preheat your oven to 250°F (120°C).

Make the Caramel Sauce: In a medium saucepan, combine the brown sugar, corn syrup, margarine, and salt. Cook over medium heat, stirring to blend. Once the mixture starts boiling, continue to boil for 5 minutes, stirring constantly.

Add Baking Soda and Vanilla: Remove the saucepan from the heat. Stir in the baking soda and vanilla extract. The mixture will become light and foamy.

Coat the Popcorn: Immediately pour the caramel sauce over the popcorn in the pans. Stir gently to coat the popcorn with the caramel sauce. It’s okay if all pieces aren’t fully coated at this point.

Bake: Place the pans in the preheated oven and bake for 1 hour, stirring every 15 minutes to ensure even coating and baking.

Cool and Store: Line a counter or countertop with waxed paper. Pour the caramel corn out onto the waxed paper and separate the pieces. Allow it to cool completely. Store in airtight containers or resealable bags to keep the caramel corn fresh and crunchy.
