Ingredients:

2 (3.5 oz) packages instant vanilla pudding mix
1 (8 oz) container frozen whipped topping, thawed (like Cool Whip)
3 cups milk
1 (16 oz) package graham cracker squares
1 (16 oz) package prepared chocolate frosting (store-bought or homemade)

Directions:

Step 1: Prepare the pudding mixture
In a medium bowl, combine the vanilla pudding mix, thawed whipped topping, and milk. Whisk everything together until it’s smooth and well blended. Set aside.

Step 2: Layer the graham crackers and pudding
In a 13×9 inch baking pan, arrange a single layer of graham cracker squares to cover the bottom. Spread half of the pudding mixture evenly over the graham crackers. Top with another layer of graham crackers, followed by the remaining pudding mixture. Finally, place one last layer of graham crackers on top.

Step 3: Frost the cake
Microwave the chocolate frosting for about 15-20 seconds to make it easier to spread (if needed). Spread the frosting evenly over the top layer of graham crackers, making sure to go all the way to the edges of the pan for full coverage.

Step 4: Chill the cake
Cover the cake with plastic wrap and refrigerate for at least 4 hours (overnight is even better) to allow the graham crackers to soften and absorb the pudding layers.

Serving Suggestions:
Once chilled, slice the cake into squares and serve chilled. The texture will be soft, creamy, and oh-so-decadent!

Tips:
Make ahead: This cake gets even better after chilling overnight, so it’s a perfect make-ahead dessert.
Homemade frosting: If you prefer, make a simple homemade chocolate ganache or frosting for the top.
Mix it up: Experiment with different pudding flavors like chocolate or cheesecake to change up the flavor profile!
This Eclair Cake is a guaranteed hit for potlucks, birthdays, or any sweet craving! You won’t believe how easy and delicious it is.
