– 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
– 1/4 cup olive oil
– 4 cloves garlic, minced
– 1/4 cup grated Parmesan cheese
– 1 tablespoon fresh parsley, chopped
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– Wooden or metal skewers, for grilling


1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
2. In a large mixing bowl, combine the olive oil, minced garlic, grated Parmesan cheese, chopped parsley, dried oregano, salt, and black pepper.
3. Add the chicken cubes to the bowl and toss to coat evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
4. Preheat the grill to medium-high heat.
5. Thread the marinated chicken cubes onto the skewers, leaving a small space between each piece.
6. Place the skewers on the preheated grill and cook for 6-8 minutes per side, or until the chicken is fully cooked through and has reached an internal temperature of 165°F (74°C).
7. Remove the chicken skewers from the grill and let them rest for a few minutes before serving.
8. Garnish with additional grated Parmesan cheese and chopped parsley, if desired.
