Ingredients:

1 1/2 lbs boneless, skinless chicken thighs: The rich flavor and tenderness of chicken thighs make them ideal for grilling.

1 cup brown sugar, packed: Adds sweetness and helps to caramelize the chicken.

Instructions:

Marinate the Chicken: Place the chicken thighs in a bowl or gallon-sized Ziploc bag. Set aside. In a medium-sized mixing bowl, combine the soy sauce, brown sugar, pineapple juice, garlic, and minced ginger. Stir until the sugar is fully dissolved.

Seal and Refrigerate: Pour the marinade over the chicken. If using a Ziploc bag, press out as much air as possible and seal tightly. For a bowl, cover it tightly with plastic wrap. Refrigerate the chicken in the marinade overnight, or at least for 4 hours, to let the flavors infuse.

Prepare the Marinade: Remove the chicken from the marinade and set aside. Do not discard the marinade. In a medium saucepan, bring the remaining marinade to a simmer over medium heat. Simmer for 5-10 minutes to reduce and thicken slightly.

Grill the Chicken: Preheat your grill to medium-high heat. Place the chicken thighs on the grill and brush with some of the hot marinade (avoid dipping the brush back into the marinade to prevent contamination). Grill the chicken until it reaches an internal temperature of 165°F (74°C), turning occasionally.

Finish and Serve: Transfer the grilled chicken to a baking dish and pour the remaining hot teriyaki marinade over the top. Serve immediately, and enjoy the sweet and savory flavors!
