Jerk Shrimp Tacos with Pineapple Salsa

Ingredients:


1 pound large shrimp, peeled and deveined
2 tablespoons jerk seasoning
1 tablespoon olive oil
8 small flour or corn tortillas
1 cup shredded cabbage
1/2 cup diced pineapple
1/4 cup diced red onion
1/4 cup chopped cilantro
1 jalapeƱo, seeded and minced
1 lime, juiced
Salt and pepper to taste

Directions:


In a bowl, toss the shrimp with the jerk seasoning until evenly coated.
Heat the olive oil in a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove from heat and set aside.
In a separate bowl, combine the diced pineapple, red onion, cilantro, jalapeƱo, and lime juice. Season with salt and pepper to taste to make the pineapple salsa.
Warm the tortillas in a dry skillet or microwave until soft and pliable.
To assemble the tacos, divide the shredded cabbage evenly among the tortillas. Top with the cooked jerk shrimp and pineapple salsa.
Serve immediately, garnished with extra cilantro and lime wedges if desired.
