Ingredients:
1 cup all-purpose flour
1 cup white cornmeal
1 egg
½ cup oil (vegetable or canola works best)
1 cup buttermilk (adds a nice tang and moisture to the bread)
1 can (about 11 oz) Mexi-corn, drained (Mexi-corn typically includes corn with bell peppers for extra flavor)
1 medium onion, diced (for a touch of sweetness and bite)
1 medium green pepper, diced (adds color and flavor)
1 cup shredded cheese (cheddar works well, but any good melting cheese will do)
½ tsp red pepper (cayenne or crushed red pepper flakes) (adds a subtle heat)
1 tsp Crisco (or shortening) (for greasing the skillet)
Instructions:
Preheat Your Oven: Set your oven to 400°F (200°C) and allow it to preheat while you prepare the batter.
Mix the Batter: In a large mixing bowl, stir together the all-purpose flour, white cornmeal, egg, oil, and buttermilk until combined. Then, fold in the drained Mexi-corn, diced onion, diced green pepper, shredded cheese, and red pepper. Stir gently until everything is well mixed.
Prepare the Skillet: Place 1 teaspoon of Crisco (or shortening) in a cast iron skillet and melt it over medium heat. Once melted and the skillet is nice and hot, remove it from the heat.
Pour the Batter: Pour the prepared cornbread batter into the hot, greased skillet. This will help create a beautifully crispy crust on the bottom of your cornbread.
