1 (10 oz) box frozen chopped spinach
8 oz mushrooms
1 clove garlic, minced
1/8 tsp salt
1 Tbsp cooking oil, divided
2 oz feta cheese
4 large eggs
1/4 cup grated Parmesan cheese
1/4 tsp pepper
1 cup milk
1/2 cup shredded mozzarella cheese




Preheat your oven to 350ºF (175ºC).
Thaw the frozen spinach and squeeze out as much moisture as possible.
Prepare the Vegetables:

Clean and slice the mushrooms thinly.
Mince the garlic.
Cook the Mushrooms:

Heat a skillet over medium heat and add 1/2 Tbsp of cooking oil.

In a large mixing bowl, whisk together the eggs, grated Parmesan, pepper, and milk until well combined.
Combine and Bake:

Pour the egg mixture over the layered vegetables and feta in the pie plate.
Sprinkle the shredded mozzarella cheese evenly on top.

Place the pie plate in the preheated oven and bake for approximately 50 minutes.
The quiche is done when the top is golden brown and the internal temperature reaches 160ºF (71ºC).

Let the quiche cool slightly before slicing.
