Ingredients:

2 pounds steak (skirt, flank, sirloin, or hanger), sliced into ½ inch strips
1 red bell pepper, deseeded and sliced into thin strips
1 green or yellow bell pepper, deseeded and sliced into thin strips

3 tablespoons olive oil
1 tablespoon lime juice
1/2 teaspoon chili powder
1 teaspoon ground cumin
Pinch of cayenne pepper
1/2 teaspoon Kosher salt
1/2 teaspoon fresh ground black pepper
2 cloves garlic, minced
6-8 tortillas, warmed

Instructions:

Step 1: Marinate the steak and veggies
Place the sliced steak into a sealable bag. In a separate sealable bag, place the sliced peppers and onion. Combine olive oil, lime juice, chili powder, cumin, cayenne pepper, salt, black pepper, and garlic in a jar with a tight-fitting lid. Shake until the marinade is well blended. Pour ⅓ of the marinade over the steak, ⅓ over the vegetables, and reserve the remaining marinade in the jar for later use. Seal the bags tightly and refrigerate for at least 1 hour or overnight for maximum flavor.

Step 2: Cook the vegetables
When you’re ready to cook, heat a large skillet over medium-high heat. Add the marinated vegetables to the skillet and cook for about 5 minutes, stirring occasionally, until they are just tender-crisp. Remove the vegetables from the skillet and set them aside.

Step 3: Cook the steak
In the same skillet, add the steak strips and cook until they are browned and cooked through, about 7-10 minutes. Stir occasionally for even cooking.

Step 4: Combine and finish
Once the steak is cooked, add the vegetables back to the skillet. Pour in the reserved marinade and toss everything together, allowing the flavors to meld.
