Teriyaki Chicken Lettuce Wraps

Ingredients:

For Teriyaki Chicken:
1 pound boneless, skinless chicken breasts, diced
Salt and pepper, to taste
1 tablespoon olive oil
1/4 cup teriyaki sauce
2 cloves garlic, minced
1 teaspoon grated fresh ginger
2 green onions, thinly sliced
1 tablespoon sesame seeds (optional)
For Lettuce Wraps:
Large lettuce leaves (such as butter or iceberg lettuce)
Cooked jasmine rice, for serving (optional)
Additional sliced green onions, for garnish (optional)

Directions:

Season the diced chicken breasts with salt and pepper to taste.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken cubes and cook until browned and cooked through, about 6-8 minutes.
Reduce the heat to medium and add teriyaki sauce, minced garlic, and grated fresh ginger to the skillet. Stir to coat the chicken evenly with the sauce.
Cook for an additional 2-3 minutes, or until the sauce has thickened slightly and coats the chicken.
Remove the skillet from heat and stir in thinly sliced green onions and sesame seeds, if using.
To assemble the lettuce wraps, spoon a portion of the teriyaki chicken mixture onto each large lettuce leaf.
If desired, top the chicken with a spoonful of cooked jasmine rice and additional sliced green onions for garnish.
Roll up the lettuce leaves to enclose the filling, creating a wrap.
Serve the Teriyaki Chicken Lettuce Wraps immediately, with extra teriyaki sauce on the side for dipping, if desired.
