7 medium Red Potatoes, baked
1 pound Bacon, cooked and crumbled
3 cups Sour Cream
2 cups Mozzarella Cheese, shredded
2 cups Cheddar Cheese, shredded
3 Green Onions, sliced
1/4 teaspoon Salt
1/4 teaspoon Black Pepper

Preparing the Potatoes:

Cut the baked potatoes into 1-inch cubes, ensuring even sizing for layering.

Greasing the Baking Dish:

Grease a 13 x 9 baking dish to prevent sticking.

Layering the Casserole:

Place half of the cubed potatoes in the greased baking dish.
Sprinkle with half of the salt, pepper, and bacon.
Top with half of the sour cream, followed by half of the mozzarella and cheddar cheeses.
Repeat the layers with the remaining ingredients: potatoes, salt, pepper, bacon, sour cream, and cheeses.

Baking the Casserole:

Bake the casserole uncovered at 350°F for 20-25 minutes, or until the cheeses are melted and bubbly.

Garnishing with Green Onions:

Once baked, sprinkle the sliced green onions over the top for a vibrant finish.

Make-Ahead Option: Assemble the casserole ahead of time and refrigerate until ready to bake.
Customization: Personalize your casserole with additional toppings like chives, tomatoes, or a dollop of sour cream.
