Ingredients

  • 450 grams (1 lb) boneless, skinless chicken breasts
  • 450 grams (1 lb) Velveeta cheese, regular or Mexican
  • 1 can (283 grams / 10 oz) Rotel tomatoes, regular or hot
  • 450 grams (1 lb) spaghetti pasta
  • 113 grams (1 stick) butter
  • 1 can (298 grams / 10.5 oz) cream of chicken soup, undiluted
  • 1 can (298 grams / 10.5 oz) cream of mushroom soup, undiluted
  • 1 medium onion, chopped (about 150 grams / 5.3 oz)
  • 1 bell pepper (red or green), chopped (about 150 grams / 5.3 oz)
  • Salt and pepper, to taste

Instructions

  1. In a large pot, boil the chicken breasts with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Cook until done, about 10 to 12 minutes. Remove the chicken and set aside.
  2. In the same pot, boil the spaghetti pasta in the remaining broth according to package directions. Once done, drain the pasta and set it aside. Do not rinse.
  3. Melt the butter in the empty pot and sauté the chopped onion and bell pepper until they are soft and fragrant.
  4. Add the Rotel tomatoes, cream of chicken soup, cream of mushroom soup, and cooked chicken (cut into bite-sized pieces) to the pot. Stir well after each addition.
  5. Gently fold in the cooked spaghetti until everything is well combined.
  6. Add the Velveeta cheese and stir continuously until the cheese is fully melted and the mixture is creamy. Add salt and pepper to taste.
